| I just made a really refreshing fruit/lettuce salad tonight which included dried apricots. Its from the cookbook fresh&easy. I could post recipe if u wish.

From Kosher by design - honey and pecan breaded coated chicken served with an apricot chutney. Its really yummy.
The apricot chutney is just chopped apricts and duck sauce. You could serve it with any breaded chicken.

This is not a precise recipe, but I make it all the time and its pretty failproof. Boil a package or more of dried apricots for about 15 minutes in about two cups of water with a half cup to one cup of sugar until the sugar is dissolved and the apricots plump up. (you can substitute orange juice for part of the liquid). Meanwhile peel and slice sweet potatoes (I use 5-7 large ones but use as many as you need to fill your pan) To make the slicing easier you can microwave the sweet potatoes for five minutes first until they are starting to soften but not fully cooked.
Spray or oil a pan (9 X 13 inch or rectangular disposable baking pan). Spread a layer of sweet potatoes in the bottom of the pan, place or toss apricots on top, then layer potatoes and then apricots again. You can add slivered almonds on top. You can put little bits of margarine on top, but I leave it off. Pour the remaining liquid from the apricots over the top. For added wetness, you can pour some more orange juice over the whole thing. Cover with foil and bake at 350 for about an hour. (The foil keeps the apricots from getting burned and softens the potatoes. )

* Coronation chicken: technically chicken salad with light curry-flavoured mayo, apricot jam and
chopped apricot, garnished with toasted almond. I've posted recipe seveeral times on imamother.
Great for summer shabbat lunch, or any use for leftover cooked chicken. Makes fabulous sandwich.
Serve on crunchy lettuce bed with rice as sides.
* Apricot chicken
* Couscous: Chope and add to still-warm, cooked couscous.
* Make apricot compotes (just cook with water, optional sugar), enjoy with yogurt or toast.
* If you have loads of apricots (pref bright orange ones ratherthan brownish ones), you can make
apricot roll candies, though this takes time. You need to put apricot on top of double boiler inside
a pot with a tight-fitting lid, make sure there's enough water in the pot. Let steam over a low flame
for about 30-45min till apricot is really soft. (Don't boil or let water touch, otherwise it won't harden).
While still very hot, whizz in a food processor with 1tbsp lemon juice (for 600-700g dried apricots)
and superfine sugar (not icing, caster or granulated sugar. whizz sugar to powderly state if using
regular caster sugar) that's about 50-75% of apricot. Grease surface of a clingfilm laid out on a counter.
Divide apricot in 2 while hot, roll each into a log that's about 2"diameter. Let cool first, then
leave to air-dry to chewy consistency (takes about 2days) in dry cool area. Slice in 3/4" thickness.
You can add shelled, skinned unsalted pistachio nuts to processed apricots before making into log--
they make pretty orange and green colour contrast. You can freeze uncut logs.
