| I bought merguez, which I know we like, I've just never made it before. How do I prepare it? I was planning on serving it with couscous. Also, what do I do with the plastic casing it's in- leave it in there while cooking, or remove it beforehand? TIA!

my dh made them, I didnt have any , but he made them like a regular hot dog.
im pretty sure he removed the casing

No need to remove casing, BUT you need to make a few slits to avoid merguez explostion!
Easiest one is either grill as they are, or slice, fry and make scrambled egg in the same pan.
The flavour is quite assertive, so go easy. Once grilled/pan-fried, you can slice/cut them and
make a pita sandwich or top on salad (mmm).
You can also add to potato and onion casserole, add to chicken casserole or add to cholent.
