I baked a batch of challa today. The recipe I have yields more than I need for Yom Tov and Shabbos so the rest went into the freezer.
What do I do with the challa I need for Shabbos and Yomtov? Do I store it out of the freezer? Will it keep fresh for that long?

Keep it in the freezer.
Take out each challah half a day / a day before needed. _________________ Really Awesome Mom!

No no no, don't keep them out!
Freeze them, then rebake Erev Shabbos. The Challos you're using for Y"T seudos, you can put on the blech/hot plate to rewarm prior to the seudah.

The bigger problem is now- finding enough space in my freezer for all these Challas

What about bakery challahs?
Are they going to get hard if they're stored in plastic bags out of the freezer/fridge (or begin to mold)?!
No room in my fridge/freezer for bakery items, except for cheesecake.

Probably not, but it won't taste as fresh.

Skip the plastic bags and repackage them in ziplocs (with ALL the air squeezed out). That's your best bet.

Just a warning to ask your LOR regarding taking food out of the freezer on Shabbos/YT for the next day or following night. If he says that it's hachana, you won't be able to take out challah on Shabbos for the first night of YT or on the first day for the second night. (Days are easy because you can always take out the night before.)

| when I bake challos, they usually go to the freezer when they are cooled . and I take them out with just about enough time to defrost. eg; my little rolls, ten minutes . big challos , about half an hour

| Agree with those who said to put them in the freezer. Homemade challos have no preservative in them and therefore go stale pretty fast. I bake on a Friday, and always put the challos for shabbos day away in the freezer.
