| So I made my blintzes tonight and we are not eating then until sunday afternoon. Should I freeze them or do you think they will keep in the fridge? Do they freeze well, because I think I'll feel better about eating them...thanks!

Blintzes freeze AMAZINGLY and I think they taste better after being frozen. If you use a cottage cheese filling it will not have big chunks of curd in it if you freeze it, which is the way I like it.
