I made a delicous sweet potato pie- which was quite easy. I realized after that I am not sure it will freeze well. Any ideas of if or how I can freeze it.
Do you think it will stay good in the fridge till Motzei Shabbos?

Is it the type with topping?
If it is the topping might get a bit soggy. If not then definitely you can freeze it

I have frozen sweet potato pie, and it was okay, though a bit soggy. It will probably last until Motzay Shabbos, but I don't know how much longer any leftovers will keep.

I've done it before also. Just made sure to heat it uncovered.

so you think I should just leave it in the fridge till the meal and then warm it up?
I also have extra topping maybe when I take it out of the fridge or freezer I can add the topping before warming it up?
What do you think?

When I froze it, the topping was actually fine, but the inside was a bit "watery".I do it anyway (I have one in the freezer right now.)

1 prepared pie crust

5 or 6 medium sweet potato's (cooked, drained & mashed)
1/2 c sugar
1/2 c coffee whitner
3 eggs
1 tsp vanilla

mix and pour into the pie crust

Topping:
1 stick of margarine
1 C flour
1/2 C Brown Sugar
1 C. Chopped Pecans

Bake and enjoy!
