I like to balance the meat and dairy meals on yomtov. Neither DH nor I care for all 4 meals to be dairy. The first lunch will most likely be dairy so I am thinking to make a meat meal for dinner that night. What can I make that is not too heavy?

Skirt Steak Salad
3 Tbsp olive oil, divided
1 1/4 lbs. skirt steak
1/2 box baby bella mushrooms, sliced (1 1/2 cups)

Heat a large dry skillet over medium heat. When you feel the heat rising from the pan, add 1 tablespoon of olive oil. Cut the steak as necessary to fit into the pan. Sear skirt steak, 7 minutes on the first side, then 5 minutes on the other, in batches as necessary. Transfer steak to cutting board and let rest 5 minutes.
Using the same pan, sauté the sliced mushrooms in the remaining 2 tablespoons of olive oil for 2 minutes.
Slice steak on slight diagonal, across the grain, in 1/4 inch slices.
Arrange romaine lettuce greens on 4 dinner plates. Top with sliced red onion, sautéed mushrooms, and halved grape tomatoes. Drizzle a bit of dressing over each salad. Garnish with sliced steak.

Asian chicken soup - it's like a meal in a bowl, with pieces of chicken, noodles, and vegetables.

If you do soup first, you can do s/t in puff pastry for after with some sides

This is really good and a bit different. Sorry about the weird layout. the quantity after each ingredient is the amount in grams.

SWEET AND SOUR CHICKEN MEATBALLS

rice vinegar

SWEET AND SOUR CHICKEN MEATBALLS

Combine ground chicken, salt, egg, oats, cilantro, 1 Tbsp (15 mL) cornstarch, hot pepper sauce, 1 Tbsp (15 mL) grated fresh ginger and garlic.

Shape mixture into 16 meatballs.

In pot with lid, combine remaining ingredients, except green onions and peppers. Add meatballs. Cover, bring sauce to a boil, then reduce heat until sauce thickens and meatballs are cooked through (approximately 20 minutes) or until a meat thermometer inserted into the chicken pieces reads 165°F (74°C). Stir in green onion and peppers and simmer an additional 5-10 minutes. If the sauce becomes too thick, stir in more orange juice.

Serve meatballs on serving platter over cooked rice or egg noodles. Garnish with more sesame seeds and minced cilantro.

Sooooo yummy and easy! Dh said it was ready to go into a restaurant menu. I didnt use flanken though, too chewy.

I decided I'm making tortillas. Just fry up some minced meat and onions and lots of different veggies in bowls, a few different sauces and everyone can make their own.

Here is a great recipe for either Tortillas Or Wraps. My kids can not wait for yom tov when I usually make them. enjoy!

1/2 cup/s Soy Sauce
1/4 cup/s Hoisin
1/4 cup/s Light Brown Sugar
1 tablespoon/s Cornstarch
4 Chicken Breast
2 Cloves Of Garlic
1/2 package/s Coleslaw Mix
6 Tortillas Or Wraps

Preparation
In a small bowl mix the soy sauce, hoisin sauce, brown sugar and cornstarch. Set aside. Spray a large deep skillet with cooking spray. Cut the chicken into 1 inch pieces. Add chicken and garlic and cook on medium until chicken is cooked through. Stir in the coleslaw mixture and cook until mixture wilts. Add the sauce to the skillet and stir. Cook until heated through. Cool the mixture. Meanwhile heat the tortillas according to directions (no need to heat if using wraps). Spoon chicken mixture into tortillas and roll. Fry a few minutes on each side. Serve hot or warm
