When you talk about texture do they like crunchy, mushy etc? I would build off of that. I like food to have texture I rarely like things to be mushy. I still eat tons of veggies but I cook them to suit my taste.

sometimes I do more breakfast inspired foods that are dairy - less unhealthy

cottage cheese oatmeal pancakes - really healthy and delicious
bread blintzes - not the healthiest but I use ff cream cheese and they dont know
egg muffins - basically egg water cheese and frozen veggies (which u could leave out if veggies r an issue)
mini calzones using whole wheat pizza dough, fat free ricotta and a little cheese - the kids love holding mini ones
you could try a vegetarian-mushroom or bean - baked taquito - again the kids like little things they could hold

I would experiment with cooking veggies to different levels of done-ness and see what they will eat. I think asking them to try a few bites and then they can make themselves cereal, pbj or whatever you think is appropriate is a reasonable option. Make it clear they need to try the new food and then it is their responsibility to make themselves an alternative. Since I don't know how old your kids are this is all a generalization.

I speak from experience as the kid here. Until high school I ate almost nothing and my mom totally let me get away with it. Now BH as an adult I have outgrown it and will try almost anything. I dont always like it but I will try it. I wish she would have encouraged me a little more to try new things. Becoming a more adventurous eater has enriched my life in so many ways.

A lot of kids (and grown ups) love broccoli if you melt cheese on it. You can serve it on a baked potato or with any other meal your making.

serve baked potatoes with shredded cheese or tuna. add baked sweet potatoes as a healthy option too. you'll be surpprised which of your kids get to like that.

Oatmeal Cottage Cheese Pancakes Recipe #43072

1/2 cup oatmeal

1/2 cup ff cottage cheese

1 teaspoon vanilla

4 egg whites or 2 eggs
Blend all ingredients in blender.
Spray skillet with cooking spray and cook just like"silver dollar" pancakes, a few small ones. Serve with Fruit preserves

These are things we enjoy: (I rarely use more then half a small bag of shredded cheese per meal I also use low fat cheese as often as possible.)

Cheesy rice and beans with bell peppers (can be eaten plain as burritos or with taco chips)

Quessadillas

Baked Omelette with hashbrown potatoes

pasta with sauteed veggies and a sprinkling of cheese

Fish Tacos

Eggplant parmesan (I dont bread instead I make a layer of eggplant sprinkle breadcrumbs and repeat so its not fried but its crunchy)


WHATS THE RECIPE OF THE CHEESY RICE AND BEANS WITH PEPPERS??

here's a great easy yummy dairy recipe, and relatively healthy too. make brown rice, put it in a 9x13, take bodek brand cauliflower heads, cut em up a bit, throw em in the pan too. add shredded cheese and sauce, bake. yum yum and the kids don't notice the cauliflower. Laughing

I originally got the recipe from joy of kosher. I sautée two bell peppers in a largish pot. When they are soft I add two cans of black beans and mix around. Then I use a box of near east Spanish rice with the seasoning packet. You could use any rice and season with mexican spices. Add as much water As the rice calls for. Cook as long as the rice takes.

I have also added frozen corn and soy sausage.

At the end add cheese to your liking.

We like this as is, stuffed in burritos or eaten with tortilla chips.

I do baked tuna patties or tuna loaf (you can try to hide veggies in the tune, like shredded carrot).
Cottage cheese pancakes.
Noodles with mushroom "cream" sauce - with a bechamel based sauce and canned mushrooms, sometimes with tuna as well.
You can add veggies to mashed potatoes
