We found out our baby daughter was allergic to eggs just before Pesach 5768. Now that she's bigger, it's harder to fool her with giving her something different than everyone else unless it's an actual egg (she knows better than to eat other people's eggie food, but she feels more left out if she doesn't get some) so we barely serve eggs on Pesach.

I'm excited by some of the recipes that I've seen above and will be trying them. One thing that was not mentioned was fudge. I make the easy kind with marshmallows, margarine, chocolate, and milk/creamer. The recipe is usually on the back of the Pesadige marshmallows. The flavored Kineret creamer that's a bit nasty in coffee is GREAT as the liquid in this recipe BTW--especially the amaretto flavor. It's very fast to make, freezes well, and tastes amazing--almost like a truffle.

I also take a Pesadige chocolate chip cookie recipe and substitute mashed banana for the egg portion. I usually make this as bars rather than as cookies, since it saves a little time.

The kids really love making matza s'mores on chol hamoed or Y"T days that do not fall on Shabbos.

We make schnitzel by just dipping in water instead of beaten egg between layers.

For sides, we make tabbouleh out of quinoa, also serve it in pilafs, as a substitute for oatmeal or just plain. We eat a lot of fruits and veggies. Sweet potatoes we serve baked, roasted, mashed, etc. I'm blessed that our kids LOVE matza. DH, too. They eat it year-round, with shmear or w/o.

My son is allerigc to eggs. He's two years old now. Can't fool him, when all the other kids will be eating cakes and cookies, he's gona put up a huge fuss. Although I see some recipes posted, we don't use many of these ingredients on Pesach. I'm not sure how many of them I could actually use. Please keep on posting, and hopefully I will be able to get something...

Yellow Rose- please speak to your Rav, I was told for a child till 5 I could give Gebruks if needed (we don't gebruk), especially an allergic child who is limited (mine was allergic to nuts and eggs and others, outgrew the eggs later on) you might be able to be makel on pesach

Thanks so much racz for the recipe for VELVET EGG FREE CHOCOLATE PESACH CAKE! I made it for y"t with only 2 changes (used almond milk instead of coffee whitener and used cherry instead of apricot jam--just seemed like a better combo for me). So soft, fluffy and tasty! My kids enjoyed it, and hubby, too. Hooray!

LA LA so glad- my DD is allergic to nuts so the almond milk wouldn't have worked.
FOr the shnitznel, we used ketchup and mustard, duck sauce and salad dressing instead of Eggs, she outgrew her egg allergy a few years back and I still don't use eggs in my meatballs, ground meat or Shnitznel.

Use 2 cups sugarbinstead of 1 cup plus brown sugar. It will be fine. Add some vanilla or vanilla sugar if you use tha4.
