Do you have leftover chopped walnuts?
Slice a banana and sprinkle it on top. = Banana nut bread (well almost) Makes a great breakfast
Chocolate spread on matzah topped with crushed walnuts.( like eating a truffle )

This isn't specific for Pesach, but is Pesach appropriate!

A friend of mine makes charoset stuffed roasted chicken, which is really delish. I think she mixes charoset with matza farfels.
Another way of getting rid of sedar plate leftovers--we pulverise horseradish, add to mayo. It goes very nicely with cold thinly sliced roast beef, with an extra kick.

banana cake.
2 mashed bananas a cup of ground nuts and one egg mix well bake in a loaf pan- half a 9x13 pan size. 360 until done about 35 minutes.
