slice cooked beets. add sliced onion.
make a dressing of equal amounts olive oil, lemon juice, and sugar. add salt to taste if you'd like.

I just peel them and cook them whole, then slice them, and toss with olive oil, fresh squeezed lemon juice, salt, sugar, and crushed garlic.

you can grate it squezze out the juice and add garlic salt mayo and enjoy

Cooked beetroots go nicely with oranges. Cut into small sticks, add sectioned oranges, dress with vinaigrette made with salt, olive oil, orange juice.
If you use cumin, simple vinaigrette dressing with chopped scallion and cumin.

Cube and add to potato salad (tints it to lovely pink colour), classic russian style.

3 beet salad ideas:

1. Cook beets in water until soft. Remove from cooking water and chop into cubes. Empty most of the cooking liquid from the pot but leave some there. Add back the chopped beets, one raw onion chopped, a TBSP oil, and a generous splash of lemon juice or a splash of vinegar and a splash of orange juice. Cook until flavors have mingled and onion is soft. Serve hot or cold.

2. Julienne or grate it raw and use it in a mixed salad with anything you feel like.

3. Cook it and then grate it along with raw carrots and season it with lemon juice and olive oil.
