I brush mine with seasoned oil (paprika, salt, garlic and onion powder) and then dip in breadcrumbs and bake.

Or dip in mayo/ketchup/mustard mixture and then in breadcrumbs and bake.

Mix honey and mustard, brush on cutlets, dip in breadcrumbs and bake.

Interesting Turkey cutlet recipe:

1 pack of Turkey chop meat, (empire brand works well or your butchers)
Bread crumbs and eggs.

Take ground turkey meat shape into a ball. Dip in egg and roll in breadcrumbs. Place breaded turkey ball in tray and gently flatten into a patty shape. Spray with pam and bake in oven for 15-20 minutes at 375 degrees.

You can spice up the meat with extra salt and pepper or ground onions. This makes an excellent Shabbos afternoon dish, because it really retains its moisture on the blech. My kids love it! They think its "Chicken nuggets!"

do you mean no shnitzel like deep frying or no frying at all?

I make a very easy stir fry with whatever veggies I have in the house (onion, garlic, peppers, tomatoes, carrots, peas, string beans, corn etc.) all or some.

cut veggies into strips if aplicable (you can't cut corn or peas and string beans ar already strips Smile ) if fresh or frozen cook with a tiny bit of oil until soft if caned add after the rest of the veggies are soft. add cut up chicken cutlets and spices (I just do salt, pepper paprika) and cook untill chicken is done.

I do juicy pan "grilled" chicken cutlets

Heat frying pan with a bit of oil.
Cut cutlets thin. Sprinkle both sides with garlic powder, salt and pepper.
When pan is very hot, sear the cutlets about 4 minutes on one side, then flip and sear another 3 minutes.
Wrap cutlets tightly in silver foil immediately to retain the juices. (This is the most important step.)
Serve 7-10 minutes later.
I slice them on the diagonal on each plate. Delicious!
