And if yes, how to reheat it?
I've reheated shnitzel after it was refrigerated - uncovered at 450, and it was kinda soggy. Maybe I need to reheat it for longer, until it turns crispy?

you can freeze it though it is of course yummier fresh.
reheat in two ways:
either bake at 450 uncovered for 20 minutes
or re-fry which is a bit of a nuisance for two minutes each side
enjoy

I'd love to update you, if I remember. I didn't end up doing it tonight, but someone gave me a pan of shnitzel that I put in the freezer. Might be a few weeks, but I'll try to let you know how it goes.

| I usually prepare it raw and freeze it in the pan. I put it straight in the oven and it's perfect!

| If the shnitzel is being reheated with sauce, it should be good. I haven't really tried it without sauce, but it would probably be better fresh.

I just either leave to defrost on the side and then heat on 350 until warm, or I put straight in the oven on 450 until warm and crunchy. _________________

I reheated it at 450 for about 20 min, then left it in the oven for about half hour till we actually sat down to eat it. It came out really good! Crispy, though the chicken was not as soft and tender like it was straight out of the frying pan, but close enough.
Also, I wanted to add, I made a sauce for dipping since it was very, very crispy - ketchup, honey mustard, and some bbq sauce. You can also add mayo for a less strong taste.

Another way to keep it from getting soggy:
Place a wire cooling rack on top of a cookie sheet then put the shnitzel on top. The heat circulates under the chicken which helps it get crispy.

I do this as well. Egg and crumb it and place it on a plate or pan with parchment paper between the layers and you can pull out as many pieces as you want at a time. _________________ Most people are about as happy as they make up their minds to be.
