I need a good recepie for felafel ,chumus, tehina, and anything else that goes in a pita bread, all ideas and recepies welcome.

For techina buy the sesame paste (recipe on jar) I know its equal parts paste and water don't remember the rest

thanks pineapple but I live in a place where I have o make everything from scratch like how do I make tehinana from sesami seeds?

thanks so much for the link I am going to try the recepie first thing in the morning:)
I am going to have a pita felafel station where people can choose what they want to fill their pita with, so what else goes in pita ?salad?

I don't have recipes for you but you can also have sour pickles or other pickled veggies (peppers, carrots, cabbage) french fries, hot sauce, eggplant either a dip or fried.

Here's a falafel ball recipe. Note that 1 can of chickpeas is equal to about 1 3/4 cups of already cooked chickpeas.

Use the extra chickpeas and tehini paste to make humus.

And don't forget the Israeli salad = finely diced veggies, for filling the pitas.

This is the one I was gonna recommend.

techina
pickles cut up
Israeli salad (not dressed - just finely diced tomatoes and cucumbers)
eggplant is really yummy. slice up eggplant and coat with kosher salt, leave for at least 20 minutes (this takes away the bitter flavor) then wash off the salt. fry in oil. (can add salt, pepper, paprika etc.)
french fries inside the pita are also yummy
