| I don't have recipes for you but you can also have sour pickles or other pickled veggies (peppers, carrots, cabbage) french fries, hot sauce, eggplant either a dip or fried.

Here's a falafel ball recipe. Note that 1 can of chickpeas is equal to about 1 3/4 cups of already cooked chickpeas.

Use the extra chickpeas and tehini paste to make humus.
And don't forget the Israeli salad = finely diced veggies, for filling the pitas.

chumus
techina
pickles cut up
Israeli salad (not dressed - just finely diced tomatoes and cucumbers)
eggplant is really yummy. slice up eggplant and coat with kosher salt, leave for at least 20 minutes (this takes away the bitter flavor) then wash off the salt. fry in oil. (can add salt, pepper, paprika etc.)
french fries inside the pita are also yummy
