| OP, you don't need "the best". You need the one that works for you. Find one you like and use it. Maybe you'll get to know it by heart and that will save you time.

I've used the kosher pallette recipe for years now and get consistently good results. Using different potatos each time. I do wish that recipe writers would give weights for the potato amounts. I'm tired of trying to guess what size a large potato is! |
I developed my own recipe by reading all the imamother threads on potato kugel. I basically took whatever recipe seemed to be posted the most with the least complaints and played around with it. I have made some horrible kugels in my life so I was up for the challenge. I use the shredder and the chopper at the same time and it gives a consistency I really like. I guesstimate the oil, the more fat the better it tastes, and add as many eggs as looks right after I mix it. I find not using a recipe helps the most. My biggest issue is when my potatoes are too starchy the kugel turns grey. If I mix it quickly enough it is less likely to happen but of course when I am in the middle of making kugel something has to happen that needs immediate attention. I think you just have to play around and know when it looks right. And make sure the oil is nice and hot before you add it.

| Whatever recipe you end up choosing, I find that Idaho Potatoes vs any other kids really makes a difference in the recipe...

I do it with the S-blade in my Braun on Setting #7 until almost smooth.
Takes about two minutes.
The texture varies sometimes because I stop it at a different time, but once the other ingredients are mixed in, it's all the same.

Justy wanted to thank you for the recope. After making my same-old same-old for years, we were looking for a change. Everyone LOVED the KBD kugel! The only tweak we would make is to spice it up a bit, maybe garlic powder or french fry seasoning? We omitted the sugar.

not a recipe, just a method -
put the eggs and the oil in the food processor and process together for a minute or two - makes it very fluffy
grate 1/2 the potatoes with the grating holes and put 1/2 in the food processor with the knife blade
put only half of the oil the recipe calls for in the kugel itself, and the rest on the bottom of the pan - makes it crispy
