| what can I use instead of sour cream in cakes, cupcakes etc. I know there is tofutti, but is there anything else instead?

Mishpacha Magazine had a substitutions page one week, and they said that:
One Cup Sour Cream (In baked goods) can be replaced in the following way:
Using a 1 cup measure, add 1/2 cup applesauce, and one egg. Add oil to fill the remainder of the cup measure.
