I use frozen chopped broccoli. Defrost and squeeze our water and mash with a potato masher.. I add a large sauteed onion and box of button mushrooms, chopped and sauteed (or you can add a can of mushrooms), about 1/4 cup bread crumbs or matza ball mix, onion soup mix, 2 eggs or one egg and one egg white and 2 tbsps of low fat mayo. Pour into pyrex or baking dish sprinkle the top with breadcrumbs and spray the top of kugel with cooking spray so it gets nice and brown. bake on 350 for abour 30-45 minutes.

I cook the broccoli, then add a little mayo,one egg, some onion soup mix and spices.

I use the goodmans onion soup mix that comes in packets- so I use one packet. I also make this kugel using cauliflower or spinach - its delicious. Sometimes I make in muffin tins for mini kugels.

Here's my recipe:

2 (10 oz) boxes chopped broccoli
3 eggs (or 5-6 egg whites)
2 T. minced onion (the kind that comes in a spice bottle)
1/2 cup mayo (I use Hellman's low fat)
1 cup soy milk
salt & pepper, to taste
cornflake crumbs, for sprinkling on top

Cook broccoli according to package directions. Drain. Add eggs, onion, mayo, milk, and spices. Mix together.

Spray a 9x13 inch pan with nonstick spray. Pour broccoli mixture into pan. Sprinkle corn flake crumbs on top. Bake uncovered at 350 for one hour.

I got this recipe from the cookbook Simple Pleasures. It's delicious hot or cold, and really easy to make too.

If you are looking for a non-mayo recipe - here's one to try

Process brocolli in the food processor
Sautee onion
Add three eggs, onion soup mix and bread crumbs

You might need to make two, because one will probably be gone before shabbos

Tovasmom, by gluten free, you mean no flour - right? The recipe I posted doesn't call for any flour. Are any of the other ingredients problematic?

GF modifications- drain the brocc really really well and you dont even need to add binder. if u can get GF onion soup mix (pesadik mix I think is usually GF) and mayo, you're set. squeeze all the water out of the brocc while draining... if u want u can add a little potato starch or cornstarch.
PS- its the same logic as non-gebrochts kugel-making in my opinion....

what type of breadcrumbs..flavored or not? in general, when I sprinkle bread crumbs on top of brocolli kugel should it be reg or not?

Do you have measurements for this? I'm looking for a mayo-free kugel and this sounds perfect!
