What's your fave recipe using mushrooms? Can be soup, starter, side or whatever. I have some fresh mushrooms I want to use.

Ive made this twice so far for the past two shabbosim and everyone loves it

I used sundried tomatoes not in oil so just added some olive oil. and did only oil for sauteeing,not butter.
Oh and no saffron and used dried herbs. Also made my own roasted pepper by cutting them putting in oven at 400 f for 20 mins drizzel with little oil.
oh sorry and dont sautee the mushroom caps too long as you dont want them to become mush so you can stuff them and still after baking they look nice Smile

hope you try it, its amazing!

Ingredients:

15 Button Mushrooms (pick bigger firmer ones)
1/4 Cup Packed Sun Dried Tomatoes in Oil, finely chopped
2 Cloves of Garlic, minced
1 Tablespoon chopped Parsley
1/4 Cup Roasted Red Bell Peppers (Capsicum), finely chopped
A Fistful of Lightly Toasted Almonds or Pine nuts
1 Tablespoon Butter + 1.5 Teaspoon Olive oil
Salt & Black Pepper
A Pinch of Saffron
Rosemary, finely chopped (or Parsley or any other herb)
Some Saved oil of the Sun Dried tomatoes
A Squirt of Lemon (Optional)
Crushed Red Pepper or hot smoked Paprika (Optional)
Note: If you are using dry sun dried tomatoes (not in oil), you will need to soak the tomatoes in about half cup of hot water to reconstitute them. Save a bit of the water in which they are soaked.

Preparation:

Wash the Mushrooms & dry them. Carefully scoop put the stem of the mushrooms to make a hollow inside the mushrooms ( I used a thin paring knife).Save the stems & the caps.



Combine 1 minced clove of Garlic with the butter or oil & heat the oil/butter in a pan. Add the mushrooms to the pan & saute them while tossing at high heat till the mushrooms start to brown & all the water dries up. Toss with the parsley; Set aside.

Chop the stems of the mushroom very fine. Chop the roasted bell peppers. Chop the sun dried tomatoes. Process the nuts till they are coarsely ground. Chop the rosemary.

Heat the 1.5 tsp of Olive Oil. Add 1 clove of minced garlic. Add the stems of the mushrooms; saute them till dry. Add salt & pepper. Add the tomatoes, bell peppers, Saffron & nuts to the mushrooms & combine. Add a squirt of lemon & the crushed pepper, if you are using them. Gently combine everything together.

With a small spoon stuff the mushroom with filling.



Put the mushrooms in a baking pan & drizzle with the oil from the sun dried tomatoes. (if you are using the dry tomato, drizzle some olive oil) ; Bake at 350 degree F for about 10 minutes.



Sprinkle some coarsely ground almonds on the mushrooms. (You can use some cheese in place of almonds). Squirt some fresh Lemon Juice if you want.

Some simple things I like to do with mushrooms, and which I've done recently are mushroom barley soup, and mushroom sauce.
Mushroom barley soup (actually cooking at the moment for supper Smile ) - I just sauted onion, added salt and pepper, garlic powder, then the sliced mushrooms, sauted together till soft. Add in the barley, and water, and let simmer for a looong time, till it's thickened and yummy Smile

Mushroom sauce- made once for a mushroom lasagna- this was really yummy, my dh loooved it. Don't remember exactly how I made it, but it was something like this:
Saute onion in small pot, add salt, pepper and nutmeg. (I might have also put in allspice) Add mushrooms, saute till soft. Add milk (cuz making it milchig anyway, otherwise use soymilk), and a little bit of flour (about 3 tsp, or more/less, depending how big the sauce is ur making)
Keep stirring over low flame till thick and saucy.
Then I layered the lasagna- just like regular lasagna, only using the mushroom sauce instead of tomato sauce- noodles, mushroom sauce, cheese etc. and bake.

Also made similar mushroom sauce for a variety of other dishes, using soymilk instead of the milk, and skipping the nutmeg. Served it over snowpeas/green beans, rice, etc.

I also mushroom barley soup. Here is a recipe for eggplant mushroom quiche that is really good (and no one ever guesses that there is eggplant in it)

2 cup/s Flour
1 stick/s Margarine
3 tablespoon/s Vinegar
3 tablespoon/s Baking Powder
2 Large Onions
1 Eggplant Sliced Thinnly
1 box Mushroom Sliced
1 cup/s Water
2 tablespoon/s Mushroom Soup Mix
3 Eggs

Preparation
Mix the flour, margarine , vinegar and baking powder together. It should form a nice dough. Place half of dough into a pie dish. Saute the onions in oil add the eggplant and cook until soft. Add the mushrooms and then add the water and mushroom soup mix. Cook until nice and thick. Cool slightly and then add the eggs. Pour over the crust and then roll out the other half of the dough and place on top. Bake at 350 for about 45 min.

Or how about Chestnut Salad that has mushrooms in it?

Salad
2 Red Pepper
1 box Mushroom Sliced
3 Cucumbers
1/2 box Chinese Noodles
1 Red Onion Sliced
1 Bag Chestnuts Already Cooked

1 Bag Lettuce
Dressing
1 teaspoon/s Salt
1 tablespoon/s Soy Sauce
1/4 cup/s Sugar
1/3 cup/s Oil
1/3 cup/s Lemon Juice

Preparation
Cut all the vegetables and mix together. Mix the dressing together and pour over the vegetables. Sprinkle the chinese noodles on top

I once went to solo in manhattan and had an amazing parve mushroom soup, I tried to copy it and have made this recipe many times with rave reviewsl

1 onion diced
1 whole garlic peeled and sliced
olive oil for sauteeing
2 tubs fresh white button mushrooms
1 tub baby bello mushrooms
2 Tbsp. flour
salt, black pepper to taste
dash of white wine

sautee onions and garlic until soft and limp, add sliced mushrooms and sautee covered on medium flame until completely soft. (the mushrooms will "sweat" when covered and let out liquid) add flour and mix well. add spices and wine and mix. add water but just barely to cover (the soup is thick)

bring to a boil, then lower flame and cook for 1/2 hour.
with an immersion blender, blend soup, but leave it with small chunks for thicker consistency.

Mushroom quiche.
mushroom soup.
stir fry with mushrooms.
mushroom salad (tasted it but never made it)
and we love love deep fried mushrooms.
also you can add mushrooms to lettuce, corn, tomatoes and add a mayo/vinegar dressing. delicious.

I made up a mushroom kugel and it is a hit every time I serve it!

1 package (12 oz) fresh mushrooms
1 medium onion
3 eggs
1/2 c flour
1 t salt
2 T oil

slice or dice mushrooms (I've done it both ways and they both turn out good.). dice onion. mix all ingredients together, then pour into greased 8x8 pan. bake at 350 for 40 min.

You can use any red table wine like semi sweet is fine.
