I know its a bit of an oximoron but I'm having someone tomorrow for supper who is on a diet and so I need something healthy to serve for dessert. In the summer its easy - you can just serve fruit but now I'm kind of stuck... Any ideas? Thanks!!

What exactly is wrong with eating fruit in the wintertime?

Thanks those are both great ideas!! There's nothing wrong with fruit in the winter but melons etc aren't in season now...

core an apple... fill it with raisins and cinnamon - then pour apple juice over it (I know sounds silly - but baking a fruit in its own juices brings out the flavor more) ... and pop it in the oven for about 20 minutes - when it gets soft youll know its done...

You can make a winter fruit salad - cut up apples, oranges and mix in a splash of orange juice. Optional you can add any of the following: sliced bananas, pears, craisins, raisins, canned pineapple chunks. You can add a little sugar, but I usually don't because we don't like very sweet foods.
