I'm currently nursing DS, and due to a super sensitive stomach (combined with multiple allergies) I'm allowed to have the following vegetables only:
cucumbers
zucchini
tomatoes
carrots
onions
Any salad ideas that incorporate these???????

Cucumber salad
Marinated tomatoes
Zucchini slaw
Carrot salad with shredded carrots

(I tend to make simple salads Embarassed )

cube all your "legal" vegetables. drizzle with lemon juice, olive oil, salt and pepper.

Greek couscous salad (with or without feta cheese)

tomato salad (tomatoes, red onion, garlic, red wine vinegar or lemon or balsamic, salt and pepper)

lemony dill carrot salad (carrots, dried dill, lemon, olive oil, garlic and scallions optional, salt)

cumin carrot salad.

kirby salad (kirbys, onion, lemon juice, sugar, salt)

roast zucchini with olive oil, s & p.

marinated salad with thinly sliced zucchini, carrot, onion, vinegar, sugar...

bruschetta zucchini (roasted zucchini boats topped with tomato salad)

zucchini soup

carrot soup

shredded vegetable soup (zucchini, carrot, onion, barley if allowed)

roasted vegetables (onion, carrot, zucchini, grape tomatoes)

carrot fries

roasted zucchini sticks

slow roasted tomatoes

onion blossom

if you need amounts, let me know.

tomatoe & onion salad
carrot salad

squash coleslaw

1 large squash grated
1 med carrot grated
2 T mayonnaise
3 T vinegar
suger to taste
pinch of salt

mix well & chill

Cucumber Salad:
3-4 cucumbers
1 Tbsp salt
1 medium onion
1/2 cup vinegar
1/4 cup water
1/2 Tbsp sugar
dash pepper

Slice cucumbers and onions thinly. Put in bowl. Add remaining ingredients. Mix well. Refrigerate several hours before serving.

I usually use a different recipe that's very similar, but I can't find that one right now.


Marinated tomatoes:
6-8 tomatoes
1/2 cup oil
1/3 cup wine vinegar
1/2 tsp salt
2 tsp oregano
1/2 tsp black pepper
1/2 tsp dry mustard
2 cloves garlic, minced
1-2 Tbsp minced onion
parsley (optional)

(variation: use basil in place or oregano and omit the mustard.)

Slice tomatoes crosswise and arrange in deep dish or bowl. Mix remaining ingredients well. Pour over tomatoes and let marinate, covered, in refrigerator overnight.


For zucchini slaw, I don't have a recipe, but shoemaker's looks good.
