I accidently defrosted parve coffee creamer - what dessert or cake can I make with it?

Efrat Libfroind has a yummy recipe for coffee cream and chocolate decadence that calls for soy milk or coffee cream...

I don't use parve creamer, but rather vanilla rice dream. Would this work as well? I usually substitute it for parve creamer in kugels and ice cream and it's been fine.

Here you go -- note that this might vary slightly from the original recipe. It is really good.

2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 1/3 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 cup Coffee Rich (or soy milk, etc.)
1/2 cup oil
1 cup boiling water
2 tsp. vanilla

Mix dry ingredients and then add the rest. Bake in well greased Bundt pan for 50 minutes at 350 degrees. Remove from pan and cool completely.

Glaze
1 1/2 tbsp. margarine
3 tbsp. brown sugar
1 tbsp. Coffee Rich
Boil and cool completely, then whisk in:
1/2 cup confectioner’s sugar
1 tsp. vanilla
approx. 2 tsp. Coffee Rich (add gradually just until right consistency)

Put waxed paper around cake and pour glaze over cake. If freezing, glaze after defrosting.

Rice Dream or other milk substitute is fine. I like Almond Milk.

broccoli spinach kugel

1 bodek broccoli
1 bodek spinach
8 oz mayo
1/2 stick margarine
3 tsp flour
1 1/2 tsp veg soup mix
1 1/2 tsp onion soup mix
1 coffee creamer
6 eggs

cook veggies for 15 min in salt water mash, add margarine, beat eggs add rest of ing,
if desired put corn flakes crums on top & bottom, bake on 350 for 1 hour.
