If you'd prefer to end up with a large flat piece (like to roll and stuff), then use a mallet to flatten it. If you're going to cut into small pieces anyways, then don't bother and just cut it. _________________ Want to lose weight fast? Want to keep it off easily?

Use whichever method seems easier to you.
I find it easier and neater to slice thin and make two or three same sized cutlets, so that's what I do. _________________ Really Awesome Mom!

I used to bang them, but didn't end up so nice.
Since I slice them into thin pieces they're much more tender and nicer when fried

I was going to make it for supper today, but my kids had pareve, so I made milichig. Thanks everyone, especially Pandabeer for telling me it comes out more tender . I know that banging meat makes it more tender, but I wasn't sure about chicken. I do like banging when I'm angry though .

Okay, so sauce or whatever. Sauce is usually sugars, so less sugar, and therefore still healthier
Maybe grilling doesnt make a big difference-depending on the marinade of course.

For grilling, you don't want them fat -- it is much more difficult to cook thoroughly without overcooking if they're not uniform thickness.

Banging is easier but more mess cutting takes more timme... I personally spend a couple extra $$ to buy ready thinned ones and yes they get eaten much more. _________________

I also use kitchen shears, and I find it goes fastest when they are still partially frozen. So I take them out of the freezer about 5 hours before I want to deal with them.
