Quinoa with spices
a la Bon Appetit

rice
quinoa
bay leaf
salt
oil
onion
garlic
cumin
lemon
cilantro
parsley

You boil 2 parts quinoa to 1 part rice, with the bay leaf.

Heat 2 T oil and cook your cut up onion until soft, add 2 cloves cut up garlic and a sprinkle of cumin. Add your juiced lemon and a quarter cup each of the herbs.

Eat hot or cold.

Looks like a good recipe, but I'm confused.

Do the quinoa and the rice take the same amount of time to cook? With how much water? How did you do it?

You add all of the herbs to the onions, cook them, and then eventually add to the quinoa? It's unclear.

A quarter cup of each herb? I'm assuming that means they have to be fresh -- tha's a lot. For how much quinoa/rice?

Yes, fresh. Coook separately if that's what you're comfy with.

you can cook it together, I have done it and it was very good!

Can I omit the rice?
