Any suggestions for food able to be eaten on a plane/or at airport without a sukkah?

Doesn't the airport have a sukkah? Otherwise, eat before...and after!

Not everyone is so machmir about that, especially when no sukka is available.

I'm pretty sure you can eat all foods except hamotzi, hagafen and mezonos.
but there are different levels I guess...

I don't think you are meant to starve, if there is no succah , there is nothing you can do.

I think it says in the shulcahn orach that if you are on a trip (I.e. Airport) that you do not have to eat in the succah!

Some pple do not eat fish or meat out of the sukkah - or fruit from the 7 minim. Mezonos on rice/rice cakes might be okay, as it is not one of the main grains. DH went on as business trip and took ricxe/corn cakes, fruit, nuts, & shehakol cereal w/ a box of soy milk.

One of our guests went back to EY on Chol HaMoed, and mentioned that he was making sure to drink alot before going to the airport, because he was going to basically be fasting for the entire plane ride and checking-in/out, and till he got home - about 14-15 hours.

That's very dangerous to be on a plane without drinking. The air is very dry on a plane, and it is very easy to get dehydrated.

I guess if there would be any underlying health conditions that actually made it dangerous one would either avoid traveling at this time, or if it was unavoidable would possibly make use of allowances.

Our guest is a young man presumably in good health. it's quite the norm for Chabad Chassidim to travel without even drinking water chutz l'Sukkah, although some might look at this as a chumrah, it is one for which we have mesiras nefesh.

one more thing for those who are traveling. I know one lubavitcher who travels for work and he spoke with rabbonim who basically told him he could open the front & back seat doors, put a bamboo mat on top, and sit under it on a stool and eat. (obvs won't work on a plane but for those traveling by car...)

I thought I heard that too. You can ask your Rav.

You need to ask a shaila. Some men won't even drink (it must be really hard for those in buildings I cannot even imagine personally), and some men are allowed everything but a seuda (yes, there are charedim too, before someone asks), and some are in the middle. You really cannot know what YOU need to do unless you have a clear minhag on this.
