DOUGHLESS POTATO KNISHES-boil 8 large peeled potatoes
-saute 2 large onions
1/2 stick (1/4 cup) margarine
1 Tbs salt
black pepper
4 eggs
2 c flour
-I double/triple recipe and add more onions. I taste it first to make sure delicious mashed potatoes then add eggs and flour. I don't always measure flour, I put in till stiff enough but still moist.
bake on 375. after 15 min brush with egg and sprinkle sesame seeds ( u can do even b4 put in oven, cuz otherwise I forget) bake additional 45 min.
when I do it in cupcakes I keep an eye and do less than hour. I dont like it so well done.
can serve with mustard/onion mushroom sauce
SQUASH (zuchinni) KUGEL-2 round dough crusts/make my own dough
6 zuchinni
2-3 carrots
cook, drain, mash
1/2 cup cubed onion
2 eggs
1/2 stick (1/4 cup) melted margarine
1 tsp salt
1 Tbs sugar
1 heaping Tbs mayonaise
2 Tbs onion soup mix
TOPPING:
1 stick (1/2 cup) melted margarine
1 cup cornflake crumbs
bake 350 one hour
dough for 2 round + one small pan: (from spice & spirit-basic pie crust-wrote it out in double though)
2 1/2 cups flour
1 tsp salt
12 + 2/3 Tbs margarine/shortening (good luck figuring it out-about 1 1/2 sticks)
6-8 Tbs ice water
APPLE STRAWbERRY KUGEL 2 round/9x13
3 cups flour
1 1/2 cups sugar
1 tsp vanilla
3/4 cup canola oil
1 egg
1 tsp baking powder
3 granny smith apples
cinnamon
1 21 oz can strawberry pie filling
-Spray pan well with pam so will come out easily. (I turn upside down onto plate then on another plate so right side up.)
-1/3 crumbs-apples-sprinkle cinnamon-1/3 crumbs-pie filling-1/3 crumbs
bake on 350-1 hour

Things I've frozen successfully for Rosh Hashana or other yomtov
Soup: chicken soup (though I don't like veggies going mushy), carrot soup, lentil soup, lamb-tomato-lentil soup, butternut squash soup
Mains: meatballs, brisket, braised lamb (tastes leaner if you can skim off fat from gravy), schnitzels, roasted chicken (whole), roast beef, stuffed vegetables, cholent (WITHOUT potatoes), lasagna, fried fish pieces
Sides: broccoli kugel, rice, rice w/browned vermicelli, yerushalmi kugel, kasha w/bow ties, ratatouille
Dessert: fruit compote, apple cake, orange cake, brownie, biscuits
I usually prefer to do vegetable side dishes fresh. DON'T FORGET TO DEFROST THEM BEFORE YOMTOV!

| I defrosted the whole bird (still in the original plastic wrap from the deli) the day before on the bottom shelf of the fridge. Took it out and wrappped in double foil, then heated in the oven (my setting was 110C, about 1.5hrs as I put before yomtov and we didn't sit down to eat till after 8pm). Came out quite hot through the centre and moist.
