SQUASH SOUFFLE

1 package (20 oz) frozen butternut squash
1/2 cup sugar
1/2 cup flour
3 eggs
scant 2 cups milk or pareve substitute
2 oz margarine (you could prob even leave this out)
Dash of cinnamon (and ginger, if you like the taste)

Mix sugar and marg together. Blend in all other ingredients. Bake at 350 in 2 qt dish for about an hour (longer if necessary).

Recipe can be halfed, doubled, or even tripled, and freezes great!s

I went to 3 stores and couldn't find any frozen butternut squash so I bought a fresh one.
How do I make this recipe using fresh butternut squash?

I thinkthe pkgs are like 10 oz. cook and measure yours.

Cut it in half, scoop out the seeds, place cut side down on cookie sheet with a little water. Bake it in the oven until soft. (around 45 minutes to an hour.) scoop out pulp and mash.

Do I peel it before or after baking? what temp do I bake it on?

do not peel before baking. You scoop out the pulp from the shell when its soft.

bake at 350.

Alternatively, you can peel, seed, and cut up the squash and boil it till soft. Its just easier to bake it and has more flavor too.

Does this come out light? I've been making squash kugel and it's usually very dense and gummy....looking to 'upgrade'.

Bake your hardshell squash in the m'wave. Cut in half, remove seeds and strings, oil the cut side, place cut-side down on microwave-safe baking dish, nuke till soft. Cool, peel, mash and go.

I'd like to try this. Is it one pkg, or 2 = 20 oz?

Actually what I have is a 12 oz box of winter squash.
