I just want to clarify what I'm making w/ zucchini so you can assure me its ok to freeze

4 zucchinis boiled and mashed
1 egg
1Tbsp Mayo
1Tbsp Onion soup mix
Dash salt and pepper

Its not a kugel....so is it still ok to freeze??

I use silicone muffin cups and don't have a problem. Sometimes I do flip them out of the cups frozen, but I don't know how much of a difference it makes.

I would. I make broccoli "kugel" exactly like that and it freezes fine.

It might be very wet. Zucchini has a lot of water, much more than broccoli. And you will have cooked it in liquid first. So it will definately need to be crisped up uncovered in the oven. Do not defrost it first.

I make a similar zuchinni kugel - I want to know if perhaps it's better to freeze it before baking?

I'd say make a zucchini kugel that has sauteed zucchini, or finely shredded raw zucchini that has been sweated with salt in a collander to get rid of the liquid. Not zucchini that has been cooked in water. The kugel is going to be seeping in water.

Thanks ra_mom. I actually make my zuchinni kugel with fried onions and zuchinni, (sometimes I add mushroom). So I guess that would be ok to freeze before it has been baked?

It will be okay. If you cooked the zuke first, it will be watery. You probably will have to bake it a bit longer than usual once it comes out of the freezer.
