I just want to clarify what I'm making w/ zucchini so you can assure me its ok to freeze
4 zucchinis boiled and mashed
1 egg
1Tbsp Mayo
1Tbsp Onion soup mix
Dash salt and pepper
Its not a kugel....so is it still ok to freeze??

I use silicone muffin cups and don't have a problem. Sometimes I do flip them out of the cups frozen, but I don't know how much of a difference it makes. _________________ Lucky Mom to 5

I would. I make broccoli "kugel" exactly like that and it freezes fine.

Its not a kugel....so is it still ok to freeze?? | It might be very wet. Zucchini has a lot of water, much more than broccoli. And you will have cooked it in liquid first. So it will definately need to be crisped up uncovered in the oven. Do not defrost it first.

Not zucchini that has been cooked in water. The kugel is going to be seeping in water.

| Thanks ra_mom. I actually make my zuchinni kugel with fried onions and zuchinni, (sometimes I add mushroom). So I guess that would be ok to freeze before it has been baked?

You probably will have to bake it a bit longer than usual once it comes out of the freezer.
