Pumpkin muffin/cake/kugel/pie recipe
I don't remember where this recipe came from - maybe Defy Gravity?

29 oz canned pumpkin
3 cups sugar (or half splenda)
2 tsp vanilla
1 1/2 cup oil (I used half oil, half apple sauce)
8 eggs
4 cups flour (I used half spelt, half whole wheat)
2 tsp baking soda
1 T baking powder
pinch salt
1 T cinnamon

Preheat your oven to 350 and mix the ingredients.

I baked 12 Texas sized muffins and had enough batter left over for a 4 by 5 pan sized pumpkin cake/kugel that I am freezing for yomtov.

Muffins baked about 20 minutes; the cake/kugel baked for about 45 minutes (until a knife came out clean).

If you have a round tin, you can crush cookies or crackers, put them in the tin, top with the batter, bake, and you have an easy pumpkin pie.
