Easy Mac and Cheese
12 oz elbow macaroni, any kind (whole wheat, added fiber, etc.)
2 T Dijon mustard
cup sour cream (the small containers, pity we can't get CY lowfat sour cream)
small chopped onion
8 oz cheese, Cheddar preferred (an 8 oz bag is 2 cups shredded) - I use whatever cheese we haven't eaten in a while, that's in the freezer. Cut up is OK, it doesn't have to be shredded.
You boil the noodles. While that is happening, you sautee the onion, add your mustard and the cheese, especially if the cheese is in hunks and needs to melt. Add the sour cream & when entire mixture is hot, add the noodles & mix to coat.
Cover and bake for about half an hour at 400 deg.
