Summer Salad with Roasted Vegetables

1 small zucchini, thinly sliced
1 red pepper
1 head of romaine lettuce
1 small purple onion, sliced
1 avocado, cubed
1/4 cup sunflower seeds

Dressing

2 heaping Tbsp mayo
1/4 cup oil
1 squirt mustard
2 Tbsp sugar
5 Tbsp white vinegar
1 garlic clove, crushed
1/2 tsp salt

Lay zucchini on baking; brush with olive oil and sprinkle with salt. Add a whole red pepper on baking sheet. Bake in oven preheated to 450 for 15 minutes. Remove zucchini. Continue to roast pepper until skin is blistered, about 20-25 min total.

Remove pepper from oven and place into a plastic bag or bowl covered with Saran wrap. Allow to sweat for 10 min. Remove the peel, and thinly slice.

Toss zucchini, red pepper, lettuce, onion, and avocado in large bowl. Blend dressing ingredients. Pour over salad. Add sunflower seeds and toss.

I can't add the seeds - are they really needed? Should I substitute with a different crunch? Thanks.

I haven't tried it, but if I would, I would totally omit the seeds. We don't like them here, and this salad looks like it would be great without them too.
