Because we always eat dairy meals. I know there are people who eat some meat meals or who are makpid to eat dairy and then follow up with meat, but we always do dairy.

Family custom, although 90% of people I know do this too.

My husband's Rosh Yeshiva found out that we made a milchig seuda once and made a point that all of our yomtov seudos should be fleishig. It seems that he holds that basar veyayin is a chiyuv (simchas yomtov) and you cannot be mevatel that chiyuv with the minhag of eating milchigs. He said we should have some milchigs in the morning with kiddush after Shacharis and make the main day seuda a few hours later.

I don't think there's anything that everybody holds. Maybe the way you pronounce an aleph.

LOL EvenI. We don't hold you have to have meat at the meals either. Sorry if my post was confusing. So Shavuos is a "dairy" holiday and we live it up!

I'm sure some people say aleph differently.
