I don't see that one. The only cookie recipes I see are chocolate chip biscotti, chocolate chip honey cookies, and giant zebra fudge cookies. None of them say anything about flattening.
We're talking about Passover by Design, right?

| Yes it was her pesach book. is there more than one book? I dont remember what the cookie was called (I think it was cc) but I do remeber it said not to flatten the cookie.
