I'm getting so bored of all my usual shabbos salads. any suggestions for easy, yummy and healthy salads?

lettuce, purple onion, halved cherry tomatoes, fresh mushrooms sliced

dressing-
1/3 c olive oil
1/3 c honey
3 T mustard
3 T sugar
salt/pepper

for me, healthy salads are something without mayo or heavy dressing.

* Finely shred 2 large or 3 medium fennels (fatter ones are better), dress with juice from 1/2 lemon, 1 tbsp olive oil and 1/2 teasp salt. Let marinate a few hours.

* Wash, trim and slice radishes. Dress with the same vinaigrette.

* Peel, trim head/tail and finely shred 4-5 carrots. To make dressing, 1/4cup each orange juice and lemon juice, 1-2 tbsp olive oil, chopped parsley, 1 teasp grated orange rind (optional), 1 teasp honey and 1teasp salt. Let marinate a few hour to overnight.

* Scrub 2 large or 4-5 medium beetroots well. Wrap the whole thing in foil and bake for 45min (medium ones) to 1hr (for large ones) till cooked through. Let cool, peel skins. Cut into matchsticks, dress with the same dressing as the carrot salad except add a sprinkle of crushed whole cumin seeds and omit honey and chopped parsley.
