I am looking for some cookie/cake/treat recipes that have no dairy, no white flour and no sugar, honey, splenda or ANY sweetener. For the next two months I cannot eat these foods for health reasons and I am already going a little crazy.
Any ideas???

I realized I can't make the recipe Greeneyes linked to because I cannot eat dried foods and fresh dates are not in season.
I found this recipe and just tried it (see my changes below).
SUGAR FREE OATMEAL COOKIES :
Ingredients:
1 c. whole wheat flour
1 c. oatmeal
1 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground nutmeg
1/4 tsp. ground allspice
1/2 c. raisins
1 c. unsweetened applesauce
1/4 c. water
1/3 c. vegetable oil
2 eggs
1 tsp. vanilla extract
1/4 c. chopped nuts (optional)
1/4 tsp. sea salt
Preparation:
Combine all ingredients in a mixing bowl. Beat well. Drop by spoonfuls onto a lightly oiled baking sheet. Bake in a 375 degree oven for 10 to 15 minutes or until browned. Makes 48 cookies.
I did not use raisins - I added 2 apples chopped in small pieces. I also upped the apple sauce slightly. I did not put in any of the spices (bc I don't like them). Instead I increased the vanilla to 3 t, also put it 1 t lemon extract and 1 t chocolate extract. For nuts I used pecans. I used 1/2 C margarine instead of the oil.
So far I've only tasted them warm - not fantastic but good considering the limitations on the ingredients. I wonder how they will taste once they cool down.

| Hm...maybe I'll try these as well because I just found out I'm gestational diabetic and need to be off sugar, dried fruit, white carbs, etc for the next 3 months. This Shabbat I did great by not eating the desserts but I'd love to have something just for me that is a nosh when I'm in the mood. I'll let you know how they come out.

I dont know if I m overlooking something with this recipe- but here goes...
10-12 oz silken tofu
(calls for 1.5 tbsp honey- maybe leave that out?)
1 tsp vanilla
6 oz good quality chocolate
combine first three ingredients in food processor until smooth. melt chocolate. add to processor and combine. refrigerate an hour or more. tastes great in crust if you find a recipe for one that fits with your restrictions.

Thanks begood but chocolate has sugar so that's out.
mandksima - don't have great expectations for these cookies. They have a strange texture and are not great tasting, but I am desperate.

I just wanted to add that you can also add chopped walnuts and or unsweetened flaked coconut to the banana cookies. (Maybe you can try that instead of dates? But they won't be as sweet.)
I've never eaten these cookies, but I've made them for my mom a few times. She enjoyed them, but they definitely don't have the taste & consistency of a regular cookie. They're good for someone who has food restrictions who is looking for a healthy treat they are allowed to eat.

Almond Apple Cake from Hamodia awhile back
3 eggs
1/4 c oil
1 c. unsweetened applesauce
3/4 c. apple juice concentrate (canned)
2 and 1/4 c ww flour (I've use spelt)
1 t. baking soda
1 t cinnamon and ginger (optional, I've only usede cinn.)
1 and1/2 c ground almonds
2 apples peeled
grease and flour a 10 inch round pan. beat eggs until expanded in volume and add oil while continuing to beat. Add applesauce and a.j. concentrate. In a seperate bowl mix flour, baking soda, spices and nuts. Add to batter and beat until combined. Dice one of apples and mix into batter. Slice the second apple into slices and decorate the top of the cake. Bake at 350 for about 40 minutes.

| how about agave nectar? This is all natural from a cactus. It is exactly like honey except it supposedly doesn't raise your sugar levels at all. I think you need to buy in a health store like whole foods. Try making pancakes with any flour, no sugar, then topping with agave. Or substitute in any cookie recipe. Also stevia is another natural sweetner that has no sugar effects.

Thanks funny but that syrup has other sweeteners in it that I can't have.
Relax - I cannot have agave or stevia either.
HappyMommy23 - I finally made the apple cake today. I made it in a cupcake tin - it actually came out very good and moist and dense! Thank you!
