I'm the keeper of an awful secret: both my MIL and my mom can't make good potato kugel. DH requested potato kugel for Shabbos. I have NO IDEA how to make it. I don't want to ask either DM or DMIL for their recipes.

I own a Cuisinart food processor and a hand blender, but I don't have a stand blender.

Anybody got a winning recipe (and clear instructions on how to make it!)

This is what I make every week and BH it always comes out delicious, especially fresh out of the oven it's just heavenly.

6 large potatoes, grated (I usually hand grate because I hate taking out the food processor)
1 medium onion, diced
3 eggs
3 oz oil
salt/pepper (I usually do about 3/4 tsp of salt and 2-3 shakes of pepper)

Mix everything quickly so the potatoes don't turn grey (I heard a trick to peel them and put in really cold water. I usually stick them in the fridge for a bit). Bake on 400F for about an hour or until the top is nice brown and crusty)

mine is very similar.
for a square pan:
fill bottom of pan with oil (about an inch up) and put it in the oven while preheating it to 450.
4-5 potatoes
1 medium onion

I used to use a food processor to shred the potatoes and onion, but now my husband uses a hand grater to do it.

put all the shredded stuff into one big bowl. add 4 eggs, salt and pepper. when its all mixed through and the oil is hot, add in the oil and mix well (try to get rid of the layer on top)

put into the pan, put in the oven for 50 mins to 1 hr and 15 mins (depending on how well done and brown you like it)


if youre using a 9x13, use 6-8 potatoes, and 5-6 eggs (I use a lot cuz I like it to be fluffy, not heavy)

I also use a food processor. It took me a while to get it down pat also, BUT here are two helpful hints:

If you can, make it in a pyrex glass dish bc it stops the kugel from turning brown AND it cooks more evenly.


BE SURE to SALT and PEPPER it enough..taste batter w. pinkie....

And also, try the spice and spirit recipe. Easy, simple, to the point. And if that works out for you, try the overnight potato kugel with flanken on top I got the recipe from here...I forgot about it for awhile and then last week I had a horrific friday and put it together in no time flat, put in the oven at 2:30 on Friday afternoon, it was FANSTATIC...


PRACTICE MAKES PERFECT. Rome wasnt built in a day. Neither is a good kugel macher.
