Chicken & Broccoli Alfredo
from a magazine

a lb of cut up, leftover chicken
sliced onion
4 cups broccoli
14 oz canned tomatoes, either sauce or chunky
1/2 cup Tofutti cream cheese, the kind with stuff in it is great; mayo is also fine
oil
salt
pepper
flour
herbs to taste

You stir fry your onion and add the chicken, salt and pepper. Add 1 T flour and the broccoli and the herbs. Add 1/2 cup water and cover to cook for about 4 minutes. Add the tomatoes and cream cheese. Stir and serve.

Thank you for posting recipes that are so up my league when I am getting really bored of my meals. Do I have to add the cheese? Will it work without or can you suggest something else?

this sounds good! About how many pieces of chicken legs are a pound? Also what do u mean by herbs?

You can use whatever you have; if you're buying chicken breasts for it, just look at the weight on the package.

Herbs can be fresh or dried; use what you have and what you like. I usually have fresh parsley and dill at home. But you can use dried Italian seasoning, for examploe.
