I use them a lot in salads, stir fry,sometime in soups depending on type, chicken dishes, as a topping on pizza, omlets, never in cookies

Slice a whole bunch of them and saute in a bit of oil. Add fresh chopped ginger and fresh minced garlic. Add some soy sauce and toasted sesame oil. Mix with angel hair pasta. Yum. You can add some other veggies to the scallions if you want, just saute them till crisp, not wilted. _________________ The future simply isn't what it used to be....

This is one of our favs:
Saute some scallions and a couple cloves of garlic in oil
Add sugar snap peas, sliced peppers (optional)
add some soy sauce and cook for a few minutes. It's a great side dish, it's usually gone before I can actually serve it.

A typical angel hair pasta salad is usually simple if u dont have time.
just pasta, scallions, sesame seeds and a dressing of soy sauce, sesame oil(you can use regular if you dont have) and sugar

this persian kuku sabzi you can use frozen spinach if you like. its delicious. also I just use whatever greens I have in the fridge any herb at all even dried ones work great in this dish. this is not my site but its such a pretty looking site. . http://turmericsaffron.blogspot.com/2009/03/kookoo-sabzi.html

Scallions actually freeze fairly well. Wash, dry thoroughly. Slice or cut into rings, put in zip-lock bag, put in freezer. I usually then just take the amount I need out of the bag and use as I normally would.
(I suck the air out of the bag with a straw each time I open and reseal it; that helps to keep moisture out.)

| My MIL makes kzitzot with them - she uses chopped meat, scallions, an egg, bread crumbs, salt, and pepper. She fries them in vegetable oil. I don't think there are even any other spices in there, but they taste delicious!
