Cheap food for channuka potluck

Hi,
We are having a shul potluck for channuka and last year all the food got finished really quickly and there was NOTHING left for latecomers. So this year they are asking people to bring bigger quantities of food. We are trying to keep a tight budget this year and I'm wondering what will be yummy but cheap, looking for a quiche, pasta, salad type of recipe.

sesame noodle salad and if you want to make it fancy you can throw frzn thawed veggies into it.
corn sald- corn pickle onion if you want color peppers mayonaise sugar italian dressing or pickle juice to dress
bean salad -assortment canned beans onion italian dressing
I make a veg, meat and mac dish you can add more veggies than meat to make it stretch if you want recipe let me know don't have exact but can give you idea
you can make a rice with onion soup mix and frozen veggies and cut up boneless meat or chicken into it
if dairy do a baked ziti lasagna with veggies etc...
