DH just started a new job. There are lots of frum people in the company, but no kosher restaurants nearby. He would need to take lunch every day. He wants something that can be eaten cold, and we've run out of ideas past cold cuts and tuna sandwiches.
What do you suggest?

| Today my husband took some big crackers, cut-up vegetables and tuna. You can make a big salad with crackers or croutons, and grilled chicken.

Caesar Salad with cold chicken nuggets (I send the salad, chicken and dressing separated so it doesn't get soggy)
avocado sandwich
a salad together with pita and hummus/techina (one of his favorites for some reason)
cheese blintzes (dh likes them cold)
tuna patties
Greek salad (again, separated) with a roll or two
breaded chicken cutlets
I'll try to remember what other cold things I send. Good luck!!

| I think sandwiches are the most user-friendly foods at work. so try to be creative with sandwich ideas... egg salad and lettuce/tomato/onion, cream cheese and lettuce/tomato/onion, chumus and pickles, grilled chicken and lettuce/tomato/onion, grilled cheese and tomatoes, peanut butter and broken up pieces of chocolate, avacado and lettuce/tomato/onion, etc., as well as tuna sandwiches and deli sandwiches, which you mentioned... Alternate the bread you use, like sesame rolls, onion rolls, rye bread, pita bread, baguettes, etc...

| Sushi is another idea to take for lunch. Also if you don't want to put the vegetables such as cucumber/tomato in the sandwich, give DH the sandwich with a filling in it and if its possible give DH a large chunck of cucumber and a tomato etc to cut up and put in when its time to eat - this way the vegies stay fresh and crunchy.

| If you want.. I have a recipe for something called a 'scotch egg'. It is vegetarian picnic food basically and be sent cold with a salad. It is really good... Basically a hard boiled egg with a nut/cheese mix around it. Very filling.

I mix it up with sandwiches and salads.
Sandwiches:
1) creamy feta cheese - make a delicious spread by whisking 1/2 c feta cheese w 2 Tbsp sour cream, add tomato and onion slices to sandwich, sprinkle with oregano or basil and black pepper
2) cold cuts with ketchup or other condiments
3) egg salad
4) mayo and sliced eggs
5) tuna salad
6) mayo, cream cheese or butter with cheese slices
7) mayo, cream cheese or butter with scrambled eggs
Vary the breads and rolls so that it doesn't get boring.
Cold cut sandwiches and tuna salad sandwiches can be frozen for up to 2 weeks and taste fresh if wrapped in foil and then sealed in a bag.
Salads:
1) shredded cheese Caesar salad (shredded cheese with creamy Caesar dressing and garlic croutons)
2) creamy deli salad (with sweet creamy dressing and yellow croutons)
3) sweet vinaigrette deli salad (with sweet vinaigrette and melba toast)
4) salad with deviled eggs (with creamy garlic dressing and toast)
5) salad with tuna scoops (mash 6 oz. drained tuna with 3 Tbsp mayo and 3 Tbsp bread crumbs (secret to the perfect tuna) (with Caesar dressing and toast or garlic croutons)
6) Greek feta cheese salad (feta cheese, Greek lemon dressing, melba toast)
7) cheddar cheese pasta salad (macaroni, cubed or shredded cheddar cheese, shredded carrots, diced celery, mayo, sour cream, garlic powder and salt)
8)shredded cheese avocado dressing salad (shredded cheese with creamy avocado dressing and terra stix)
9) salad with egg salad scoops (with french dressing and toast or garlic croutons)
10) egg and avocado salad (avocado, tomatoes, quartered eggs, mayo, lemon, garlic, salt and pepper)
Cheddar cheese macaroni salad can be made in advance and stored for up to 1 week in the fridge.
I send the salads in a cheap 9" round aluminum pan so it can be thrown out, place a plastic fork on top, add various croutons chips or 2 pkg. of melba toast, and a disposable 2 oz. container of dressing which can be drizzled on salad later so it doesn't get soggy in the meantime, then cover the whole thing with foil.
When I prepare a dressing, I divide the extras into the cheap cute small disposable dressing containers and have them ready in the fridge so I can throw them in. Sometimes I just use store bought.
If your dh likes cold chicken and meats, you can cube up the leftovers from dinner, and throw it on top of a salad and add a dressing and some carbs.
Sometimes I'll send instant noodle soup cups.
Yogurts with chocolate granola on the side. _________________ Really Awesome Mom!

A few more ideas:
veggie burger on a roll with ketchup, pickles, lettuce etc. (I like to send everything separately & let him put the sandwich together before eating so the bread doesn't get soggy.)
pasta with cottage cheese, cinnamon & sugar
I get creative with pasta salads: tonight I mixed ww penne with canned black beans & corn - I flavored it with lemon juice, olive oil, salt, fresh ground pepper, & oregano
I also send a bag of cut up veggies or a salad. (I package dressing separately so the salad stays crunchy.)
We buy plastic one pound containers by the case, & I use these to package the various salads, pastas, cut up fruit etc that I send.

I just read recently that there is a commercial product that you put into avacodo that keeps it from turning brown. I forgot where I read it and what it is. If anyone knows about it, please post.
Thank you.
