I have lots of apples from apple picking and I was thinking of making applesauce. Any good recipes?

Peel apples and cut into chunks. Put in pot with some water and boil covered. Stir and check that there is enough water. When soft, it's ready!

The process of making applesauce is basically cooking the apples and making them into the desired consistency. If you want it sweeter, add sugar. If you want it tastier, add cinnamon or grape juice (think Pesach recipes!) If you want it chunkier just mix it with a fork. If you want it creamier, trying blending it. It's pretty much self explanatory! Not much of a recipe, but enjoy!

I do it as baschabad does. I don't follow a recipe, just peel & slice apples, add a small amount of water, & cook until the apples are soft. I like using cortland apples. You can add sugar if you like, but usually the fruit is sweet enough on its own.

You can add sliced pears and or peaches to the apples for a different flavor.

My mom occasionally makes applesauce with a vanilla bean & it comes out incredibly good. If vanilla bean weren't so expensive, I'd do it too!

I remember my grandmother used to put a bit of jello into her applesauce, and it was delicious!

Just as a variation, you can also add a few purple plums (chopped, skins on) or a handful of blackberries--it will add lovely pink tint to the apple sauce. I also like adding a bit of cinnamon. You can freeze applesauce in a tupperware. You can also add them to noodle kugel recipe. My MIL adds them to sauce in her meatbal recipe which adds lovely sweet and sour taste.

Aside from apple sauce you can make apple cake or apple crumble.

A different variation on the basic compote:
Peel and slice apples
Fill pot with water until apples are just covered
Add a peeled and sliced lemon (try to pick out the pits)
Throw in a bag of frozen strawberries (nice color and good taste)
1.5 - 2 cups of sugar. It is a lot of sugar, but you need it because of the lemon, which makes it sweet and tangy:)
Don't leave the pot closed completely or it will run over your whole stove (like pasta..). Once it's boiled, lower the flame, keep the lid half open and every so often push the apples down with a slotted spoon. I let it simmer for about an hour. Before you close the flame, taste the water to see if you like the flavor and possibly add more sugar..

I slice up a bunch of apples (I like Cortland apples), and add a bag of frozen strawberries and a bag of frozen rhubarb. Instead of adding water, I add about 1/2 cup of apple juice to keep the apples from burning until they start cooking and let off their own juice. I usually don't need to add sugar, as the strawberries provide sweetness, but it's not too sweet, as it's countered by the tartness of the rhubarb. If I have other fruits sitting around, I often add those too - peaches, pears, plums, etc. Stir occasionally to keep it from burning, and don't cover pot all the way, or it will boil over.
