Hi,

Looking for a few good Crockpot dinners....I just started grad school and leave the house every day around 7 and come back after 4.......if I could prepare something the night before and then just put it on in the morning that would be great...just looking for some recipes now...Thanks guys!

They had a great pepper steak crockpot recipe in the binah last year sukkahs. I can post it after shabbos if you want.

Just made the most delicious crock pot beef & vegetable stew for dinner tonight. It is from Binah's Spice it Right cookbook. If you're interested in the recipe, I can look it up.

Beef and Vegetable Stew with Red Wine

2 1/2 pounds boneless beef chuck, cut into 2 inch pieces
2 cups dry red wine
3 T. olive oil (approx.)
1 lb. mini red potatoes or 3 sliced sweet potatoes (I did a mixture of both)
2 medium leeks, white and light green parts only, thinly sliced
2 medium carrots, peeled and cut into 1 inch pieces
4 garlic cloves, chopped
1 celery stalk, cut in 1 inch pieces
1 tsp. dried rosemary
2 tsp. dried thyme
1/2 cup flour
kosher salt & freshly ground black pepper
2 T. tomato paste (I skipped this because I forgot to buy a can & added a squirt of ketchup instead)
1 cup chicken stock

Marinate meat in wine for at least 4 hours or overnight. Make sure each piece of meat is submerged in wine.

Place one T. of oil at the bottom of the crock pot. Add vegetables.

Combine rosemary, thyme, & flour in a shallow plate. Pour meet into a colander set over a large bowl and set aside wine. Dry meat with paper towels and generously season each piece with salt and pepper. Dredge the meat in the flour mixture and shake off each piece to remove excess flour.

Heat a large frying pan over medium heat and lightly coat pan with olive oil. Brown meat on all sides, in batches if necessary, for about 6 minutes. Transfer meat to the crock pot. Add about 1 cup reserved wine and tomato paste and stir gently. Stir in chicken stock and season with salt and pepper.

Cook the stew for 2 hours on high and then 5 hours or more on low until meat is tender.

Yields 4 servings.

This was really, really good.
