DH doesnt like chicken soup at every seudah. I thought of making fruit soup. ANyone have a recipe? _________________ When the going gets tough, the tough gets going!

ie you would serve regular cold fruit soup?
just boil up a bunch of fruit as you would make stewed fruit...add plenty sugar to make sure its not too sour and then blend it with a hand blender until smooth.
would be really good instead of soup for a day time meal. _________________

Strawberry Soup:
1 lb bag of frozen strawberries, defrosted OR the equivilant of fresh
1/2 c. white sugar
1/2 c. white grape juice (I have subsitued, apple, peach, or mango)
2 T. lemon juice
1/4 c. water
Blend together until smooth.
We like it slushy, so I blend everything before the strawberries defrost and then I freeze it again and take it out a couple of hours before serving.
Cocktail soup:
1 big can of cocktail fruit (drain half the liquid)
Place the can of fruit with half of the juice in the freezer and freeze overnight. The next morning, blend the fruit and juice with:
1/2 c. sugar
1 T. lemon juice
1/2 c. red grape juice
1/8 c. apple juice concentrate
red food coloring (optional)

This one can be served cold or warm.
2lb/1kg plums (or mix of fruits like pears, dried apricots, tinned unsweetened cherries, frozen berries)
2 medium apples, peeled and cored
4 cup water
1 cup wine (any will do, sweet/dry, red/rose/white)
1/2 cup sugar (you may want to use less if using sweet wine)
1 small cinnamon stick
lemon juice (optional)
1 tbsp cornflour or potato flour
Remove stones from plums but leave the skins on. Cut whole fruits (pears, plums, apples) into bite-size chunks. In a large pot, combine fruits, water, wine, cinnamon stick, sugar. Cook over high heat for 10min till it starts boiling gently. Lower flame and simmer for 20-30min till fruits are soft. Turn off heat and puree the soup using a food processor or a blender (hand-held works fine). Check to see if you need more sugar or lemon juice. Dilute cornflour/potato flour with 2tbsp cold water and stir into soup. Cook for 2-3 min till the mixture is slightly thickened.

that's what I do but I don't blend it, it's delicious!

Summer fruit soup
Fresh:
Peaches
Nectarine
Plums
Apricot
Cut into slices
Bag of frozen rhubarb
Cook for a few hours
Blend sweetened strawberrys n add to pot when still hot. taste and if it still needs sugar then add and taste. _________________ G-d grant me the serenity to accept the things I cannot change, encourage me to change the things I can and wisdom to know the difference.

1 can of crushed pinapple
1 large can of peaches or 2 can of small peaches (you can do lite)
1 cup water
1 package of red jello (I use diet)
blend all together with hand blender or in blender
Place in Fridge to chill,
