I got this recipe a few years ago from the Hamodia magazine and have been making them ever since! Even people who don't usually like honey cookies love these!
Incredible Honey Cookies
1 1/2 cups margarine
2 cups sugar
6 eggs
1 cup honey
7 cups flour
1-2 teaspoon cinnamon
1 1/4 teaspoons baking soda
1 teaspoon fruit juice of your choice
1/4 teaspoon ground clove (optional, I omit)

Cream margarine and sugar.
Add eggs.
Add everything else.
Place batter in fridge 1-2 hours, overnight is ok.

Preheat oven to 350.
Line pans with parchment paper.
Form small balls and place on pan not too close together.
Press down on each cookie very slightly with the tip of your finger, not too hard.
Bake until they are light golden brown 10-12 minutes. Do not overbake or they will be rock hard. Let them sit in pan for a few minutes before moving to rack to cool.

ENJOY!

The recipe is from Rebbetzin Meisels, and the column was from Tamar Ansh.

Thanks for posting, so I can compare what I wrote down because I love this recipe but this year for some reason I made two dud batches and I can't figure out why. Now I can compare your version of the recipe with mine.

Btw, you don't roll each ball in a bit of flour? that's what I have in mine.

You're right, I usually skip that step, it just makes them dry and powdery imo.

I'll have to try and do that for my next try. I made multiple batches last year and they all came out amazing. I made one batch so far now and it came out great but then I made another batch and there was something wrong with the cookies, they didn't brown well and tasted weird, I had to throw it out and I made another batch and I also chucked it. I'm using the same oven, same pans with parchment paper and everything. It's so strange.

It's funny, b/c I made the one from Spice and Spirit that the OP said she didn't like, and I LOVED them! I think I ate most of them myself.... Embarassed

I've made them many times, last night as a matter of fact. My DH couldn't stop eating them!
The only problem I have with them as that the recipe is very big - makes about 120 cookies, so it takes a long time, but you have enough for the whole season!

This is a great recipe. The cookies are soft and moist. My kids always tell me I should sell them to the bakery.
1/2 cup margarine
1/2 cup brown sugar
1/2 cup honey
1 egg
1-1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon

preheat oven to 375. Beat margarine, sugar, honey, and egg until smooth. Add remaining ingredients. Drop by teaspoonful onto cookie sheet. Bake until set and light brown around edges (surface of cookies will appear shiny) about 7-9 minutes (I do it for at least 9). Let stand for 3-5 minutes before removing from cookie sheet.

Note: I use white whole wheat four and earth balance margarine when I make this recipe.
