Egg roll wrappers are larger than wonton wrappers. When I make egg rolls, I buy egg roll wrappers. When I make kreplach, I use wonton wrappers.

For egg rolls use egg roll wrappers. Though I never heard of boiling egg rolls. If you don't want to fry them, better to bake them.

Don't try to bake eggroll or wonton wrappers. Smile
(If you want to bake, use pastry dough.)
You can the wrappers for frying or boiling. (Though I don't know if boiled eggrolls will be very tasty.)

If you want to make egg rolls (ie cylinder shape ones), you'll need to fry or bake. Otherwise they'll disintegrate if you try to boil.

If you boil, you'll need to use wonton skin which comes out like kreplach. But then you can't fill it too full (otherwise they'll burst).

I use wonton wrappers & make mini eggrolls to serve as a side dish for the main course on Shabbos.
