why is my potato kugel always sticky and heavy not soft and fluffy? I tried so many different recepies and nothing helped what am I doing wrong? can anybody please tell me the secret to soft and fluffy kugel? thanx

Do you put in enough oil? That makes the kugel not be sticky. Also put more eggs to make the kugel softer and I also add seltzer. It makes the kugel fluffier and softer. Good luck!

Maybe not. Maybe OP uses kugel as a hat. Or something.

you can always sew potato peels together to make a tichel Very Happy

no but really-

try using alot of liquid in your kugal. it will make it softer and dont let it overcook

My recipe is as follows: Maybe this will be of help.
First preheat oven on broil.
8 idaho potatoes
7-8 eggs
1 cup oil
salt, I just pour maybe about 1-1/2 tblsp.
dash of white pepper
Mix eggs, oil and spices well. Grate potates in processer and add to eggs mixture. pour in 9x13" aluminum pan, with baking paper. Bake for 30 minutes on broil, that sets the kugel to a good texture and crust, after 30 minutes, lower oven to 450, and bake for one hour, and then lower oven to 350 for another about 40 minutes.
(Now I know some people add 1 cup water or seltzer and they're kugel is nice and fluffy but that never worked for me, mine comes out better w/o water, I think it also depends on the oven.)

That is a lot of oil, I would make the same thing but with 1/4 cup of oil, and half cup of water or seltzer.
After the first hour, I would pour another half cup of water right on top of the kugel too.
But my best kugel comes out crispy and tasty in the frying pan, no oil or water, and just a bit of olive oil to fry. I also make it by hand, grated with an old fashioned grater. The best kugel in the world, just ask my kids or grandkids. Another secret, a good quality nonstick frying pan makes it taste even better.

Do you put it in a hot, preheated oven? At what temp? For how long?
Do you pre-do anything with the potatoes, or let them sit?
Have these posts helped so far? Can you figure out what you might do differently?
Just want to help the next lady who has these problems (before they become full blown hashkafa problems - L-rd, why me? Wink (Please be assured that no one's laughing AT you. I genuinely understand how this can be stressful - wasted ingredients, time, energy, etc.)

Seriously, my kugels are not usually very good, but I started to follow recipes to the T. I even weigh the potatoes! I think there's a great recipe here that calls for 2 kilos (Europeans!!) potatoes & it really works. Remember, though, every oven is different. You may need to make allowances for yours. Good luck!
