I bought it because I read about it on this site. Soes anyone have any recipes for cakes with it or do you just use your reg recipe and substitute the sugar with it? If so, what is the exchange rate?

it's liquuid and sweeter than sugar, so you can't sub it equally.

I believe it's 2/3 - 3/4.
So if the recipe calls for 1 cup sugar you'd put either 2/3 of a cup agave or 3/4 cup agave.

When converting a recipe from sugar to agave, you need to lower the liquids. You should be able to Google it to get the right numbers. Elanaspantry (a site I just got the link to) uses it a lot in her recipes. Agave can also be added to tea and it's absolutely delicious. We also use it whenever you would use maple syrup, such as over pancakes. I need to get it more into my baking but it is quite a good sweetner.

Agave is low glycemic so it is supposed to be suitable for diabetics (but of course, ask your doctor first).

You can also use it in liquids. I use it for tea and even lemonade (but it does taste different). You can substitute it equally for honey.
