I am looking for a salmon wellington recipe.
Also do you tell the fish store exactly how they should slice the fish?

Salmon Puffs
salmon
pre-cut squares of puff pastry dough
1/3 cup mayo
2 cubes parsley
2 cubes cilantro
2 cubes basil
1 cube garlic
1/2 tsp mustard
1/2 tsp lemon juice
Salt and pepper to taste!
Cut the salmon into small squares, and roll out the puff pastry so its pretty thin!
In a small bowl mix the mayo, parsley, cilantro, basil, garlic, mustard, lemon juice, salt and pepper!
baste each piece of salmon with the sauce and than place on puff pastry square.
Brush the top with egg and cut one diagnol slice in it!
Bake at 375 and ENJOY!
another option
8 salmon fillets
puff pastry (defrosted)
1 beaten egg
sauce
¹
⁄3 cup mayonnaise
3 Tbsp mustard
2 Tbsp vinegar
3 cloves garlic, minced
salt and pepper
½ Tbsp sugar
Combine all the sauce ingredients. Taste and adjust the seasoning. Spread the sauce over the salmon,
on all sides, reserving any extra sauce. Transfer the coated salmon to a pan lined with baking paper.
Open the puff pastry (don’t roll it out) and with a lattice cutter cut out a lattice. Open up the dough
and spread it over the salmon. (If you don’t have a lattice cutter, you can cut thin strips and form
the lattice over the fi sh.) Tuck the ends underneath and trim any excess dough. Carefully brush the
beaten egg over the dough.
Bake at 400°F (200°C) for 25 minutes or until the dough turns a golden brown. Serve with a slice of
lemon and any leftover sauce.
Tip:
Using a lattice cutter makes for an especially elegant presentation.

fine so here is one with spinach,
salmon spinach in dough
thaw some frozen spinach and drain it very well
then put it in a frying pan with a little oil and some spices:garlic powder, salt, sauteed onion (or onion soup mix)
roll out a sheet of dough and cut into squares -
put into the middle of each square a piece of fresh (raw) salmon - put some of the spinach mixture on top of the salmon and then close the dough
brush the tops with egg and parsley flakes
bake until it turns golden brown

If I had to freeze this, I would prepare them and then freeze them raw.

Salmon Wellington
6 salmon steaks cut in half
Marinate salmon in 1 tsp teriyaki sauce for an hour
in a large sautte pan add a little oil
sautte 1 bag of cabbage- for 1/2 hour
sautte 1 chopped onion- for 15 min
sautte 3 ounces of sliced mushrooms- for 5 min
add 1 tsp terriyaki sauce
salt and peper
12 puff pastry squares
spoon cabbage mixture on to square then place one peice of salmon fold pastery into four corners and pinch
beat one egg for wash
lay flat on greased cookie sheet
bake covered for 1 hour at 350
bake 15 min uncovered
