I have defrosted skirt steak that I want to use tomorrow night for dinner. I was thinking of steak sandwiches with salad on the side.
How should I prepare it?

Skirt steak is good no matter how you prepare it.
(If you find skirt steak it too salty, soak it in water first. I like it salty, so I don't.)
Just heat some olive oil in a skillet until it's really hot, and pan sear on each side for a few minutes.
Can I come over for supper, please?
This steak salad recipe is phenomenal btw.

Thanks I'll use the skillet.
No barbeque sauce or s/t? Sandwich won't be dry? Shoule I saute onions in a sauce to add after?

I would probably use the skillet, and serve with barbeque sauce and raw onions or sauteed onion rings.
Sorry, I don't have a real recipe for you.

Yes, I do sometimes. Do you have ketchup, red wine vinegar, soy sauce and brown sugar? I have a yummy recipe.
If not, just use a sauce made from half ketchup and half brown sugar.
(Personally, I love skirt steak and would serve it as is, with optional condiments on the side.)

No red wine vinegar & no soy sauce. I guess we didn't stock up enough. Thanks anyhow.
I guess I'll just pick up a bottle of ready barbeque sauce.
