I'm trying to make a pareve spinach pie (experimenting). What can I use in place of sour cream? Mayonnaise? Is that gross?

(Alternatively, if anyone has a recipe, please post.)

I know they have pareve sour cream. I think it's made by tofutti.

If you're looking to make a kind of creamy spinach pie, you might want to try the Spice and Spirit Creamy Broccoli Kugel recipe and use spinach instead of the broccoli.

I know about the pareve sour cream but I don't want to buy it. Smile

How much frozen spinach do I sub for 1 bunch fresh broccoli? Scratching Head

I usually use one 16 oz bag of frozen broccoli, so I'd imagine that 16 oz of spinach would be fine.

I was just reading a cookbook (The New Cake Mix Doctor) and IIRC she says that sour cream, buttermilk, and yogurt are usually interchangeable. You can make pareve buttermilk by taking a cup of milk substitute (I usually use soy), adding lemon juice (a Tbsp? not sure), and letting it sit for ten minutes.

I don't want to waste your ingredients though, just mentioning this for you to look into another time.
