Shivas Haminim Cookies

(Can be made as drop cookies or bars)
Bars are made in a very large pan or about the size of 2 9"x13" pans.

1. Mix together:
2 ½ cups wheat flour
2 cups sugar
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon vanilla sugar
2 cups barley flakes
1 cup coconut (optional)
2 cups chocolate (or carob) chips (1/2 regular and 1/2 colored or white)
1 cup sliced almonds
1 cup raisins
2. Add:
3-4 tablespoons molasses
¾ cup vegetable oil
¼ cup olive oil
3 extra large eggs
1 tablespoon pomegranate juice
½ cup chopped dates
½ cup cut up figs

3. Mix well and pour into greased pan or pans.
4. Bake at 350 degrees F. (185 degrees C.) 25-30 minutes or until done.
They should be chewy, not hard.
5. Cut in squares.

Enjoy!

It's very hard to find molasses here, so I think I'm going to substitute it with date honey. Also in good Tu Bishvat spirit Smile

I've found molasses no problem. Even Rami Levi carried it, last time I looked for it.

This cake just came out of the oven and I already broke off a little corner to taste. It's heavenly! Smile
I did have to put in some black beer too because I couldn't find any barley flakes, and it still had to be 7 minim and not 6 Wink

Yeah you can use barley flake cereal. The only reason barley is in there is to make it 7 minim. You can easily leave it out otherwise, or substitute it.

CM very sweetly bought me barley flour (they didn't have the flakes) so I used 1 c which I figured is the equivalent to 2c of flakes. It was very good, but I hate dates & figs & knowing they were in there just put me off. Next time I'll chop them even smaller (maybe in the food processor.
