TOFU STIR-FRIED

2 c. tofu, cubed
2 tbsp. vegetable oil
1 c. onion, sliced
1 clove garlic, diced
1 c. mushrooms, sliced
1 c. broccoli, cut-up
16 oz. chicken broth
1 1/2 tbsp. cornstarch
5 tbsp. Teriyaki sauce



Press out moisture from tofu gently and cut into 1-inch cubes. Stir-fry garlic in oil for 1 minute. Add tofu and fry until browned-this is key. Add onions, mushrooms, broccoli (or any veggies that you want I usually omit mushrooms and add carrots and snow peas) and 1/2 cup of broth. Cover and cook for 5 minutes. Mix the Teriyaki sauce, 1/2 cup broth and cornstarch, and add to tofu and vegetables. Stir until thickens. Sever tofu and vegetables over noodles or rice and enjoy.

I found it makes a lot of difference if you can marinade tofu beforehand--it tastes less bland and less watery. I usually let it sit in a mix of OJ and soy sauce.

Firm one is best used in stir-fry. I also like to make oven-baked teriyaki tofu--bake the above-marinaded tofu for about 25min in high (like 180C) oven and quickly put under a broiler.
You can make tofu-spinacchi lasagna/maniccoti, or crumble and mix with other veggies into quiche.

Soft/silken ones, I usually use it blended into liquid things like soup.

Drain and slice extra-firm tofu. Place slices between paper towels (or regular) and put a cutting board and heavy plates or books on top. Let it sit for about 15 minutes or so. Heat up some sesame oil and place slices in pan. Flip when somewhat brown and repeat on other side. Add some soy sauce and garlic and crushed chilies (if you like spicy) at the end. Transfer to plate and stir fry some vegies. Add tofu to rewarm. Serve with rice.

My favorite baked one is tofu nuggets. Drain and press tofu, cut into cubes and toss with olive oil, soy sauce, thyme, pepper and nutritional yeast. Bake in a hot oven, flipping once, till firmer. Also can be served with rice or pasta.

Tofu stuffed peppers: Saute crumbled tofu, onion, black beans and corn. Add some garlic powder and chili powder. Mix in a can of tomatoes. Scoop into pepper halves (I like green) and bake. Cheese on top is optional.

Tofu Scramble: Saute an onion and a green pepper. Add cubed potatoes (I cheat sometimes and use the Simply Potatoes bags) and stir occasionally till almost soft. Add a block of drained, pressed, crumbled firm or extra firm tofu. Mix. Spice it up with tumeric, thyme, salt, pepper, and maybe a little soy sauce (I use Bragg's Liquid Aminos), and sprinkle some nurtritional yeast. Serve with hot sauce.
